Is it neccesary to delete the old version before installing the new? Or is it possible to just update?

You can just update over the old version. If you already have a 5.10 range version, the installer will even remember where you put everything the last time around.

Else, if you want to be very careful, exit BOINC, backup your data, uninstall BOINC and install the new version to the same directory it's in now.

You can uninstall first, or let the installer of the new version do that for you. Both approaches work, and in neither you lose your tasks and projects.
Not running BOINC anymore for several reasons...
